Yes, the original material you're listening to was probably mixed in stereo and yes, a 2.1 system will be a more accurate representation of what the audio is 'supposed' to sound like. But IMO, who cares? Personally, I much prefer to be surrounded by speakers and 4 speakers is way louder than 2, which is definitely a plus. I've tried using only two 6.5s in front with a large amp and it's just not all that loud. Especially when I've got the t-tops off and I'm going 100+ mph.
